Lazy Man Stuffed Peppers (Chop Suey)

I love stuffed peppers but sometimes you just don’t have the time. This lazy man stuffed pepper recipe is all the goodness without the work. It’s full of vegetables and has tons of flavor. Eating a bowl of lazy man stuffed peppers and curling up on a cold winter night is comforting and will fill your belly with happiness.

You will need:

1 cup chopped pepper

1/2 cup chopped onion

1/2 cup chopped mushroom

1/2 lb burger meat

1 box of risotto

1 can fire-roasted tomatoes

Tomato sauce

 Brown the burger on medium heat in a pan until fully cooked.

In a separate pan, saute onion, pepper, and mushrooms.

Prepare risotto as the box says. I used parmesan risotto this time but I suggest sundried tomato or mushroom flavored risotto. Lazy man's stuffed peppers -a caffeinated brunette blog

Once all ingredients are prepared, mix together beef, vegetables, risotto and drained can of fire-roasted diced tomatoes. Heat ingredients together for a few minutes and serve.  Season with garlic salt and pepper.

Top dish with tomato sauce and shredded cheese. Enjoy!
