The Last Few Steps to Graduation

Hey my Beautiful and Handsome readers,

As some of you know it’s about that time for me to graduate from college and I’ve been running around as madly as the mad hatter lately.

It’s also been lovely out and I can’t tell you how absolutely happy the sunshine makes me. I pop out of my winter shell and run around aimlessly asking everyone to go to a cafe or beach with me to soak in some rays.

I’ve mostly been working on the last bits of work before I can kiss homework a sweet goodbye for once after 22 years. (and then start sending out a billion more resumes)

I cannot tell you what an amazing experience college has been for me and how excited I am to start on the next path and find a career. So here’s what I’ve been up to:

We’ve been celebrating a lot.


I’ve been lucky enough to have some of the greatest friends a girl could ask for.

and taking in some rays while searching for some luck…

Every summer I go around and search for my first four-leaf clover to start it off.

I found a FIVE-leaf clover so I hope it’s a sign I’m going to be extra lucky (keep your fingers crossed!)

Tacuba Taco Bar

Last week, my friends and I joined each other for an unexpected lunch at Tacuba Taco Bar in Branford, CT.

We originally were heading back to GZen to show our friend Jon what delicious food they had, but unfortunately it skipped all of our minds that it didn’t open until 4pm that day.

Lucky us, we found this Mexican gem right around the corner.

Tacuba Taco serves authentic Mexican street food in, I’d say, a pretty cool atmosphere.

I loved the raw Mexican feeling of the walls and the bright colors as we walked in.

We all savored over the menu before choosing our plates.

Although a small menu (which I love, it means they’re good at what they do), it was still very hard to decide.

I chose the Big Burrito made with the adobe marinated roasted chicken, and let me just say it is BIG but my belly was completely happy with the choice.

The flavors blended perfectly together. It was fresh and savory at the same time.

And the slaw in it? Gave it the perfect, fresh touch.

Nick and Sonia both tried burritos but Sonia had the Veggie filling and Nick the Pork.

Both gave it thumbs up.

Jon chose to try some of the Mexican Street Style grilled corn.

He was too embarrassed to eat it off the cob so someone…(aka me) had to cut it off the cob for him.

I was fine with that as I got a spoonful to try for all of my (hard) work.

He also ordered the Quesadilla packed with lots of meat (what a manly choice) and oaxaca cheese.

I didn’t hear him talk much at lunch, he must’ve been enjoying his quesadillas too much.

Adnan decided to be the “different” one and try the taco plate.

As my eyes saw it, I knew I’d be coming back to try some very soon.

The tacos come in freshly made tortillas and are topped with light, fresh ingredients specifically chosen by the meat (or veggies) you pick for each taco.

You can mix and match so you don’t have to have three tacos with the same meat.

Perfect for the indecisive ones (hem).

And, it comes with a heaping of black beans and rice.

They were definitely looking out for us…

G-Zen Restaurant

Usually I do a bit of searching high and low for a new restaurant I want to try.

I always like to make sure it’s a little bit different or has something special to it.

The other day we just happened upon this restaurant called G-Zen in Branford, CT when visiting a friend.

This place is an upscale vegan restaurant and as I walked in the atmosphere totally drew me in and I was hooked.

And Oh, Boy, it’s my kind of restaurant!

Even their bar was cute.

Forget the wine and beer list, we were ready.


First thing was first, order a round of Zen-gria. Lots of them…

This sangria did not disappoint. My mouth started watering as I read the menu.

It’s called a Zen-gria with organic blueberry, pomegranate, cranberry and red wine (what?!, yum!) with fresh squeezed juices served in an old-fashioned mason jar garnished with organic fruit slices.

I’d have to say one of the best sangrias I’ve tried.

Having sipped to my delight…we clinked our glasses and started on the menus.

I looked at the menu for….a while. Everything looked absolutely delicious. It came down to the Raw Tacos and the Kama-Sutra for me, both I was told were delicious.

I ordered the Kama-Sutra recommended to me.

It has a bit of a kick to it which I always enjoy.

The dish had sweet potato, broccoli and vegetables simmered in a creamy coconut curry with local Bridge tofu, diced tomatoes, fresh lemongrass and cashews served over organic brown rice.

Everything was fresh, tasty and simply perfect.

Nick got the Rock the Casbah dish.

It was a traditional Moroccan stew made with Organic Bridge tofu and chickpeas, peppers, tomatoes, sweet potato, and onion and Moroccan spices with toasted fennel and ground cinnamon served over organic brown rice.

I, of course, had to taste test everyone’s dish and it was pretty scrumptious.

The Casbah was well-balanced and the different spices rocked your mouth’s taste buds.

Sonia went for a less crazy dish and had the Downward Dog Bean Burrito.

The burrito was made with organic brown rice, spicy black beans, lettuce and shredded veggies, Daiya cheese, with house made spicy cilantro salsa in a spinach whole grain wrap.

It was served with a heaping of sweet potatoes fries which I stole…more than a few of.

My stomach was…full.

But then this baby was placed in front of me, the dessert menu.

I only agreed if it came with three spoons and some helping hands.

We decided on the Yogi’s Bliss Coconut Creme custard and it was a great decision.Gzen Branford, CT

Just look at that….

It was well worth it.

The custard was almost a frozen tapioca topped with fresh fruit and soy whip cream. GOOD.

Oh…and look! Other people think they’re awesome too.

Definitely a place to put on your restaurant list.

I’d have to say happening upon G-Zen was highly successful. Plans may be in the making for a trip within the next few weeks.

Pancakes Galore at Cristy’s Luncheonette

If you’re looking for a scrumptious pancake in any way you can possibly imagine I’ve got you covered. Cristy’s place in Westbrook, CT is AHHHmazing when it comes to melt-in-your-mouth pancakes. Whether it be topped with fruit, banana crunch or some gooey chocolately goodness, they have it all, about over 40 varieties. It was a delightful stop and I’m usually not a big pancake eater but this place takes the cake. The restaurant is cozy but you may have to wait in line if you’re not an early riser. No need to worry, the line goes pretty fast. Not only do they just have pancakes but omelets, specialty coffees and a lunch menu with tons of hotdog options.
